Sweet Potato Hamburger Skillet |Paleo|Dairy-Free|Gluten-Free

Hello Everyone! I have another healthy and super easy recipe that anyone can recreate. It's a healthy twist on your grandma's hamburger casserole, but your waist line will love you more. This skillet consists of spiral cut sweet potato acting as your "noodles", lots of healthy veggies and lean ground beef. Let's just say this meal is hubby approved and will be making its debut often.

Prep time: 10 Minutes
Cooktime: 20 Minutes

Ingredients: 

  • 3 Spiralized Sweet Potatoes
  • 1 Tbsp Avocado Oil
  • 1 Medium White Onion, Finely Chopped
  • 1 Large Carrot, Chopped
  • 1 Celery Stalk, Chopped
  • 1 lb. Grass-Fed Ground Beef
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1/2 tsp Chili Powder 
  • 1 1/2 Cups Chicken Stock, Paleo Approved*
  • 1 Cup of Canned Crushed Tomatoes, Paleo Approved* 
  • Chopped Green Onions for garnish
  • Salt and Pepper to taste
**No sugar added in ingredients. Reading food labels will change your life!


Instructions:

1. Heat avocado oil in a large skillet over medium heat. Add onion, carrot and celery. Cook until the onion is translucent and veggies are softened. 

2. Increase the heat to high and add your ground beef, cook until it is no longer pink. Add oregano, garlic powder, paprika and chili powder. Add salt and pepper to taste. 

3. Stir in the chicken stock and canned crushed tomatoes. Reduce your heat to medium-low and bring your skillet to a simmer. Add your spiralized sweet potatoes and cook for another 10 to 12 minutes or until the sweet potatoes are slightly softened. 

4. Place a serving into a pretty bowl and garnish with green onions. 

Viola! A super quick paleo dinner.
