Sea Salt and Chocolate Covered Almond Drops
As Thanksgiving is approaching we tend to eat holiday comfort food, and since I have been eating Paleo I have been trying to find the perfect recipes that taste just as good as the real thing without having to bring out my stretchy pants. The first recipe I have tried and perfected are these little drops of heaven! These sea salt chocolate covered almond drops are seriously amazing and will be a total hit at the Thanksgiving dessert table.
Ingredients:
- 1/2 cup of almond butter (I like chunky almond butter!)
- 1/4 cup and 2 tbsp coconut flour
- 1 cup of chocolate chips (use 67% cocoa chips for fellow Paleo eaters)
- Sea salt for sprinkling
Instructions:
1. In a mixing bowl, add almond butter and coconut flour and mixing together until a paste forms.
2. Take a tablespoon of the almond butter mixture and place onto a baking sheet and form into little balls using your hands.
3. Place the baking sheet in the freezer for 25 minutes.
4. While the almond drops are in the freezer take a microwave safe bowl and your cup of chocolate chips and heat up in microwave in 30 second increments until chocolate is smooth.
5. Using a spoon put the almond drop into chocolate, making sure they are fully covered.
6. Place chocolate covered almond drop on to a foil covered baking sheet and then sprinkle a little bit of sea salt for garnish.
7. After all the almond drops are chocolate covered and garnished with sea salt, place the baking sheet in the freezer for 12 minutes to harden.
8. Once your little drops of heaven are out of the freezer you can eat and enjoy!
