Paleo Chicken Pot Pie Soup |Paleo|Dairy-Free|Gluten-Free

This soup has blown my mind.....no seriously. 

I have been on a Paleo Diet for about two years now, and I have to admit some recipes are a big hit and the others a bland, gross miss. When I saw this chicken pot pie soup recipe I immediately drove to the store to get the ingredients. My hopes were high and I am glad they stayed there. This recipe is super easy and fairly quick to make.

Prep Time: 10 Minutes
Cook Time: 25 Minutes

Ingredients:  
  • 1 rotisserie chicken, shredded and skinned
  • 1 medium onion, chopped
  • 8 garlic cloves, minced
  • 2 Tbs Ghee or butter
  • black pepper and sea salt
  • 2 lb. yellow potatoes, chopped into bit size pieces
  • 2 cups of chicken broth, paleo friendly check ingredients for no sugar!
  • 3 large carrots, peeled and sliced
  • 2 ribs of celery, chopped
  • 3 scallions, chopped
  • 2 tsp of thyme 
  • 1 tsp sage


Directions: 

1. Heat the ghee in a large soup pot. Add the onions and garlic, cook and stir for 3 minutes.

2. Add the chopped potatoes and the broth.

3. Add the salt and pepper. 

4. Simmer, covered, for about 15 minutes the potatoes should be tender. 

5. Use a slotted spoon to remove onions and half of the chopped potatoes and and transfer to a blender.

6. Blend them till nice and creamy.

7. Add the celery and carrots to broth in the pot. 

8. Simmer, covered for about 10 to 12 minutes, or until the veggies are tender. 

9. Add chicken, scallions, herbs and blended onion and potato mix from the blender. 

10. Ladle into bowls or mugs. 

11. Eat your heart out!
